My go-to easy meal
I am the laziest cook in the world. So my go-to easy meal is quinoa and refried beans.
I use my rice-cooker (best kitchen appliance in my house!) for the quinoa and I love the Goya vegan Ranchero refried beans.
One cup of dried quinoa and a can of beans makes about four meals. I add salsa (Aldi’s medium is my favorite!) and some cheese, heat it up and it’s delicious!
Sometimes I add onions or mushrooms if I have them handy.
BONUS! If I let the quinoa cool, I get the whole resistant starch thing happening!
