I do a tortilla soup. It’s basically leftovers. The base is 2 cans each of chicken stock and diced tomatoes. I bring it to a boil and throw in a few corn tortillas (I can’t eat gluten) and stir until they break up. It kinda thickens the soup.
After that, I throw in leftover chicken & veggies, some rice, roasted red peppers, red pepper flakes and garlic. I separate into individual portions and freeze. When I defrost, I put shredded cheese on top, avocado if I have it, and crumble some tortilla chips into the bowl. It’s very filling.
